This recipe was featured in the Beachbody Ultimate Reset cleanse. I never would have tried it if it had not been for the Reset pushing me to experiment with new foods and recipes. I am not a huge zucchini fan but this was delicious! I was amazed at how this soup, along with a green salad filled me up for hours!

Zucchini Cashew Soup

Ingredients
  • 1/4 C cashews
  • 1 1/2 C water divided
  • 1 1/2 medium zucchini cut into small pieces
  • sea salt to taste
  • herbal seasoning to taste (basil, dill, parsely)
Instructions
  1. Soak cashew in 1/2 cup of water for 1 hour.
  2. Bring the remaining cup of water to a boil over medium heat. Add zucchini pieces and cook for 5 minutes. Drain and set aside.
  3. Place cashews (with water!), zucchini, salt, and seasoning of choice, in a blender or food processor. Blend until smooth.
  4. Heat soup in a saucepan over medium heat. Stir frequently for 4 to 5 minutes. Do not boil.
  5. Add a side of roasted sweet potatoes and beets to complete a clean, hearty meal!
