Whole Wheat Apple Cake

My husband loves apple pie. For this birthday this year I decided to experiment a bit and tried to make him a "cleaner" version using whole wheat flour and Sucanat. It actually turned out great! Upon serving we sweetened it up a bit with a drizzle of hot caramel sauce. It was delicious and we didn't feel as guilty indulging!

My husband loves apple pie. For this birthday this year I decided to experiment a bit and tried to make him a "cleaner" version using whole wheat flour and Sucanat. It actually turned out great! Upon serving we sweetened it up a bit with a drizzle of hot caramel sauce. It was delicious and we didn't feel as guilty indulging!
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix together in a large bowl apples, cinnamon and 1/3 cup of sucanat until all apples are coated.
  3. Spray a bunt pan with olive oil cooking spray.
  4. In a separate bowl mix together eggs, applesauce, butter or coconut oil, vanilla and cider/juice.
  5. Add dry ingredients: whole wheat flour, salt, baking soda, nutmeg and stevia/sucanat. Mix with spoon well.
  6. Pour half of the batter into the bunt pan and then lay half of the apples over the batter. Repeat this process and use the rest of the apples.
  7. Bake for one hour to one hour and 20 minutes until toothpick in the center comes out clean.
  8. Remove cake and set on a wire rack for 15 minutes. Loosen the edges with a knife and put the cake on a serving platter.
  9. Cut and serve. Tastes great with a drizzle of caramel sauce on top!
