I posted pictures throughout this recipe just to prove our 3 boys enjoyed this meal! We have had it in a bowl topped with some shredded cheese, as well as spooned atop brown rice. Both good. So many veggies were hidden within the kids did had no idea.

Ingredients
  • 1 can no salt added pinto beans rinse and drain
  • 1 can no salt added red kidney beans rinse and drain
  • 1 can no salt added black beans rinse and drain
  • 1 can diced tomatoes with green chilies
  • 1 8 oz can organic tomato sauce
  • 3 cups cauliflower finely chopped Fresh or frozen, be sure to thaw
  • 3 cups broccoli finely chopped I use frozen - easier to chop
  • 2 large zucchini finely chopped
  • 1 bag frozen corn kernels 1 can of corn is a fine substitute
  • 3 cloves garlic, minced
  • 1 cup red pepper finely chopped
  • 10 oz onions finley chopped
  • 2 teas cumin
  • 3 tbls chili powder
  • *1 lb firm tofu, defrosted *optional ingredient: can be added for extra protein
  • *1 cup vegetable broth *optional if you like your chili thinner and more soup like
Instructions
  1. If using tofu. Squeeze out excess water and crumble into soup pot. Brown before adding vegetables.
  2. Take time to chop all vegetables. I used my food processor to speed up this step! Add each ingredient to the soup pot.
  3. Add spices and mix well.
  4. Simmer for 1 hour. If cooking in a crock pot, heat on high for 2 hours.
  5. Spoon into bowls; top with fresh, shredded cheese.
  6. This recipe is 21 Day Fix approved. Container breakdown. 1 serving = 1 green, 1 yellow. 1/4 purple if you add tomato sauce. 1/2 red if you add tofu.

My boys enjoyed their veggie chili on top of brown rice. We made a big batch and froze a container for the following week when I knew our schedule would need a quick, reheated meal!
