1tspfinely grated ginger root(I used 1/2 teas ground ginger)
1 1/2tsp extra virgin olive oil
2tsptahini(or miso paste mixed with 2 T hot water)
1Cvegetable broth(or water)
sea salt to taste
herbal seasoning to taste(basil, oregano, etc)
Bring water to a boil in a small saucepan over medium heat. Add sweet potato pieces and cook for 5-7 minutes. Drain and set aside.
Roast bell pepper on a grill or over gas stovetop. Turn frequently until skin is evenly charred. Place in a bowl and cover with a towel for 10 minutes. Then peel skin under running water. Chop into small cubes.
Place sweet potato, red pepper, ginger, oil, tahini (or miso paste) and broth in a blender or food processor. Blend until smooth.
If consistency is too thick, add more water.
Heat in a medium saucepan, stirring frequently for 5 minutes. Add salt and seasoning to taste. Enjoy!
