Sweet Potato and Roasted Red Pepper Soup

This could be one of my favorite soups out there! I have the Ultimate Reset cook book to thank! Enjoy this on a crisp fall evening with a side of grilled veggies. Mmmmm, so good!
Ingredients
  • 1 C water
  • 1 medium sweet potato peeled and cubed
  • 1/4 medium red pepper
  • 1 tsp finely grated ginger root (I used 1/2 teas ground ginger)
  • 1 1/2 tsp extra virgin olive oil
  • 2 tsp tahini (or miso paste mixed with 2 T hot water)
  • 1 C vegetable broth (or water)
  • sea salt to taste
  • herbal seasoning to taste (basil, oregano, etc)
Instructions
  1. Bring water to a boil in a small saucepan over medium heat. Add sweet potato pieces and cook for 5-7 minutes. Drain and set aside.
  2. Roast bell pepper on a grill or over gas stovetop. Turn frequently until skin is evenly charred. Place in a bowl and cover with a towel for 10 minutes. Then peel skin under running water. Chop into small cubes.
  3. Place sweet potato, red pepper, ginger, oil, tahini (or miso paste) and broth in a blender or food processor. Blend until smooth.
  4. If consistency is too thick, add more water.
  5. Heat in a medium saucepan, stirring frequently for 5 minutes. Add salt and seasoning to taste. Enjoy!
