Instapot Stuffed Cabbage without the Fuss

In my quest to find dairy and gluten free dinner options - - and with the limited time I have to prepare a dinner with how crazy our schedules are - - I stumbled across this Cabbage Roll in a Bowl recipe and adapted it to fit our family's needs! If you don't already have an instant pot - GET ONE! This meal was served hot on the table in 30 minutes! AND, it fed my family of 5 for 2 days! Some of us put the cabbage roll mixture over mashed potatoes (see instant pot directions for mashed potatoes below), while the rest of us put it over a bed of riced cauliflower (microwavable bag!). P.S. This recipe is Paleo and Whole 30 friendly!

Ingredients
Cabbage and Beef
  • 2 lbs grass-fed ground beef or ground turkey We used ground turkey
  • 1 teas garlic powder
  • 1 teas salt
  • 1 large onion diced
  • 3 8 oz cans organic tomato sauce (optional: 1 15 oz. can tomato sauce, 1 15 oz can diced tomatoes)
  • 1/4 C coconut aminos
  • 1 teas smoked paprika
  • 1 teas oregano
  • 1 large head of cabbage, core removed and chopped approximately 16 cups
Instant Pot Mashed Potatoes (optional)
  • 2 lbs potatoes quartered
  • 3 C water or just enough water to cover the potatoes in the instant pot
  • 1 teas salt
  • 1/3 C milk
  • 2 tbsp butter
  • 1/4 teas onion powder
  • 1/4 teas garlic powder
Instructions
Cabbage and Beef
  1. Add beef, garlic powder and salt to the instant pot and hit the "sauté" button. Cook until beef is browned, breaking the beef up and stirring as needed. Approximately 5 minutes.
  2. Once the beef is cooked, add in the onion, tomato sauce, coconut aminos, paprika, and oregano. Stir together, put on the lid, close the valve, hit the "manual" button and reduce the time to 10 minutes.
  3. When done, hit cancel and quick release the pressure. Once steam is released, remove the lid.
  4. Add in the chopped cabbage. Stir well. Make sure it doesn't go over the max fill line. Put the lid back on, close the valve, hit the "manual" button, and reduce the time to 4 minutes.
  5. When complete, quick release the pressure again. Remove cover and stir.
Stove Top Directions
  1. In a large pot, add the beef, garlic powder, and salt. Cook over medium heat until browned. Add in the onion, tomato sauce, coconut aminos, paprika, and oregano. Cover and cook until onion is tender, about 10 minutes. Add in the cabbage, stir, cover and cook until cabbage is tender and cooked down- about 10 minutes.
Instant Pot Mashed Potatoes
  1. Add potatoes to the instant pot and pour enough water to just cover, season with salt.
  2. Cover and cook on high pressure for 10-12 minutes. Quick release and check to see if potatoes are tender and done.
  3. Drain water. Add butter, milk, seasoning.
  4. Use a potato masher or hand held electric mixer to mash potatoes. Serve!
