Real Chicken Nuggets

My 11 year old son Caleb threw this out there the other day, "Why don't we eat chicken nuggets anymore? When I was little we used to eat those Dinosaur nuggets. I loved those!" Son, when a nugget is formed into the shape of a small dinosaur we know there cannot possibly be a lot of actual chicken in it, right? Caleb has acid reflux and needs to watch what he eats. Spicy, fried, and heavily processed food affects him. When he was younger, and did eat chicken nuggets, he would often get stomach pains. We didn't realize he had reflux then nor did we consider the fact that what he was eating was an incredibly processed food made up of an artificial mixture of chicken parts (fat, blood vessels, pieces of bone, nerves and cartilage) battered and fried. Who wouldn't have stomach pains? Hearing that makes me want to get the money back for all of the McD's nuggets I've consumed in my lifetime! After reading the article, "What's Really Inside a Chicken Nugget?" I set out to find a chicken nugget recipe I thought my kids would enjoy. The recipe below was a big hit! REAL chicken, breaded in clean ingredients. The kids inhaled them. No stomach pains for Caleb.

Ingredients
  • 2 large chicken breasts or the equivalent in chicken tenders
  • 2 whole eggs
  • 1 cup panko whole wheat bread crumbs (I like the seasoned kind!)
  • 1/4 cup Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp parsley flakes
Instructions
  1. Preheat oven to 350 degrees.
  2. Lightly oil a cookie sheet.
  3. Cut the chicken breasts or tenders into bite-sized chunks.
  4. Beat eggs in a small bowl.
  5. Place the bread crumbs in a second small bowl and mix in other dry ingredients.
  6. Roll the chicken bits in the eggs and then in the bread crumbs. Transfer to the cookie sheet.
  7. Bake for approximately 15 minutes, flip nuggets on cookies sheet and back for an additional 15 mintes or until a meat thermometer reads about 165 degrees F.
  8. Remove from oven and allow to cool.
  9. Grab your favorite BBQ sauce and dip in! We love Dinosaur BBQ!
