Pumpkin Raisin Cookies

  • 2 cups white whole wheat flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tbsp pumpkin spice
  • 1 cup raisins
  • 1/2 cup walnut pieces
  • 1 cup honey
  • 1 tbsp unsulphured molasses
  • 1/2 cup coconut oil or coconut butter (I have used real butter as well)
  • 2 egg whites, beaten
  • 1 tsp pure vanilla extract
  1. In a large bowl mix together dry ingredients: whole wheat flour, salt, baking powder, and pumpkin pie spice.
  2. In a medium bowl, whisk together honey, molasses, coconut oil, egg whites, vanilla extract and pumpkin.
  3. Pour the liquid mixture into the dry mixture and stir until fully blended.
  4. Chop walnuts into small pieces (* favorite step for some - see video!)
  5. Last, add and stir in raisins and walnuts to the mixture.
  6. Spoon out walnut sized portions of dough onto a cookie sheet. The cookies will hold their form and not spread much throughout baking.
  7. Bake at 350F for 15-18 minutes or until golden brown.
Recipe Notes

*If you have a craving for chocolate like I often do, you can swap dark chocolate chips for raisins in this recipe.
