My friend Kelly knows my love for clean eats and over time has given me some great recipes. She is the co-creator and contributor to the "Busy Moms Recipe Box" blog. Definitely check out the site! When I was recovering from surgery not too long ago Kelly came to my door with a pan full of these amazing breakfast cookies! I swear I had one every day (sometimes 2!) for weeks and never got tired of them! I threw a bunch in the freezer so they would last longer. Kelly mentioned that they were great for pre and post runs/workouts. I can see why. They'll definitely keep you feeling full and satisfied. My kids even loved them! Ingredients
  • 3 cups old fashion oats
  • 1 cup coconut oil
  • 1 cup brown sugar cleaner optin: Sucanat
  • 1/2 cup honey
  • 2 whole eggs
  • 1 tsp almond extract
  • 1 tsp vanilla
  • 1 1/2 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tbsp cinnamon
  • 1 cup raisins
  • 1 cup craisins
  • 1 cup flaked coconut left these out or my kids would have complained
  • 1 cup slivered almonds
  • 1/4 cup flax seeds
  • 2 tbsp chia seeds
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix oil and sugar, honey.
  3. Add eggs and extracts.
  4. Add the flour, baking soda, cinnamon and oats. Stir well.
  5. Fold in remaining ingredients
  6. Bake for 14 to 16 minutes.
  7. Enjoy! Try not to eat more than 2...I dare you!
