Ingredients
  • 2 T EVOO
  • 2 carrots peeled and chopped
  • 2 celery ribs chopped
  • 1/2 onion chopped
  • 1 teas Italian Seasoning
  • 2 bay leaves
  • 1 lb ground turkey
  • 1 egg
  • 2 cloves garlic, minced or 1 tsp garlic powder
  • 1/2 C grated parmesan cheese
  • 1/2 C Panko Seasoned breadcrumbs
  • 6 C additional veggies: mushrooms, spinach, kale, tomatoes (or chicken stock)
  • 2 C water
  • 1 1/2 C dried whole grain pasta
Instructions
  1. In a deep pot over medium heat add oil, chopped carrots, celery and onions. Season with salt and pepper. Cover pot and cook veggies 5 or 6 minutes, stirring occasionally.
  2. While the veggies cook, combine meat, egg, garlic, grated cheese, bread crumbs, salt, 1 teaspoon of Italian seasoning, pepper.
  3. Uncover your soup pot and add broth and water to the pot. Increase heat to high and bring soup to a boil.
  4. When soup boils, reduce heat a bit and start to roll meat mixture into small balls, dropping them straight into the pot.
  5. When all meat is added, pour pasta to the soup and stir. Add in any other seasoning of choice. Cover and simmer soup 10 minutes until pasta and meat are cooked.
