Ingredients
  • 1 1/2 lbs ground turkey or chicken
  • 3 tbsp olive oil
  • 2 tbsp chili powder
  • 2 tbsp cumin
  • 16 oz salsa fresh is best!
  • 2 cloves garlic
  • 15 oz can black beans rinsed and drained
  • 1 cup diced zucchini
  • 1 cup chopped red pepper
  • 1.5 cups shredded cheese I use 1 cup shredded white cheddar and 1/2 cup feta cheese
  • 1 cup chopped kale (or spinach)*
  • 1/2 onion chopped
  • 6 whole wheat tortillas
  • greek yogurt (sub for sour cream)
  • *optional veggies to add or sub if not adhering to the 21Day Fix Program: avocado, corn, mushrooms
Instructions
  1. Preheat oven to 425F
  2. In a large skillet over medium-high heat add olive oil (2 tsp), ground turkey and seasonings. Brown meat.
  3. Add veggies, beans, and salsa and heat for 5 min.
  4. Coat a 9x13 inch baking dish with 1 tsp olive oil. Place first tortilla layer in pan. Top with meat mixture and sprinkle of cheddar and feta cheese
  5. Repeat to build your lasagna.
  6. Bake in for 25-30 minutes until cheese is brown and bubbly.
Recipe Notes

My boys were skeptical of this dish at first. When trying new things we have a 3 bite rule before bailing. Surprisingly, they all kept biting - even my pickiest eater! Now Mexican Lasagna is a family favorite.
