Lentil Lime and Carrot Salad

This lentil lime and carrot salad is quite easy to prepare. The lentils alone make it heart healthy, filled with fiber and protein rich. Be sure to prepare this a few hours before serving. It tastes better the longer it is in the marinade. I tend to double this recipe so I can eat it throughout the week for lunch. This is a great side salad to any meal. Not sure if your kids will dig this? Check out the video below of my 5 year old gobbling up my serving of salad at lunch! He loved it!

Ingredients
  • 2 C cooked lentils green or brown
  • 2 medium carrots shredded
  • 1/2 C chopped fresh cilantro
  • 2 tsp sesame oil
  • 4 Tbsp fresh lime juice
  • 3-4 Tbsp liquid aminos (healthier alternative to soy sauce)
  • 1/2 tsp ground cumin
  • 1/2 tsp seasoning of choice optional
Instructions
  1. Rinse lentils in a colander under cold water before cooking.
  2. In a medium saucepan, bring 4 cups of water to a boil.
  3. Add 2 cups of dried lentils to the water. Bring back to a boil and then reduce heat and cover. Cook at a gentle boil for 20 minutes, or until lentils are tender.
  4. Drain any extra water and pour lentils into a mixing bowl (preferably one that has a cover for marinating).
  5. Then, combine lentils, carrots, cilantro, sesame oil, lime juice, liquid aminos, cumin and seasoning. Toss gently to blend and coat.
  6. Cover and marinate in the refrigerator for 2 hours before serving.
