My Aunt Paula makes the best homemade guacamole. I always thought it was such a pain to prepare until I asked her for the recipe one day and made it myself. It was so easy! The boys and I sampled it until we were licking the bowl clean. I think I emailed Paula 5 times asking her to resend the recipe (sorry Paula!). Today I finally added it to my Schall Fitness recipe book so I have it to reference when needed. Now you all have access to it too! I did adjust a few of the spices to my liking. You'll want to do the same after a few taste tests! I promise you will not be disappointed! Thanks Aunt Paula!

Ingredients
  • 2 ripe avocados
  • 2 limes juiced
  • 2 Tbsp cilantro finely chopped
  • 1/4 C red onion finely chopped
  • 1/4 teas sea salt
  • 1/2 teas cumin
  • 1/2 teas cayenne
  • 1 clove garlic minced
  • 1/2 jalapeno pepper seeded and diced
  • 2 Roma tomatoes seeded and diced
Instructions
  1. Choose the right avocado. It should be dark green on the outside and feel squishy yet firm. Cut the avocado in half, remove pit and scoop the lime green flesh out and into a bowl.

  2. Toss and immediately coat with lime juice to prevent browning.
  3. Add the salt, cumin, cayenne and garlic. Using a fork or potato masher, mash until smooth.
  4. Fold in the onions, cilantro and tomatoes. Add more lime juice if needed (I say it is always needed!)
  5. Taste and adjust seasoning as needed to your liking. It is fine sitting out at room temperature for one hour.
