This was one of my all time favorite meals on the Ultimate Reset. I make stir fry often, but the combination of sesame oil and the liquid aminos atop a bed of cauliflower rice make this recipe extra tasty! When my kids can get 3 cups of veggies in in one sitting without complaining - I'm a happy mom!

Ingredients
  • 1 Tbsp coconut oil
  • 3 Tbsp sesame oil
  • 2 medium carrots
  • 1 Cup broccoli florets
  • 1 red bell pepper
  • 1 zucchini sliced
  • 1 yellow zucchini squash sliced
  • 3 Tbsp Bragg Liquid Aminos
Cauliflower Rice
  • 1 tsp extra virgin olive oil
  • 1 head cauliflower cut into large chunks
  • salt and pepper to taste
Instructions
Stir Fry Veggies
  1. Heat coconut oil and sesame oil in a large skillet or wok over medium to high heat. Add vegetables one at a time in the following order and heat for about 1-2 minutes before adding the next: carrots, broccoli, bell peppers and zucchini. Stir frequently.
  2. Once tender and crisp turn off heat and add liquid aminos. Mix well.
Cauliflower Rice
  1. Place cauliflower chunks into a food processor and pulse until broken into rice-sized pieces.
  2. Heat olive oil in a skillet and add cauliflower. Add salt and pepper. Cover and cook until heated through for 3-5 minutes.
  3. Remove lid and fluff with fork.
