Easy Chicken Stir Fry – 21 Day Fix Approved
Yields 6 servings each: 1 red, 1 yellow, 1 green, 1 tsp
  • 3 cups cooked quinoa (or brown rice)
  • 5-6cups fresh or frozen veggies
  • 4cups cooked chicken
  • 2 eggs
  • 4tsp olive oil or coconut oil
  • Optional: Low Sodium Soy Sauce
  • 2-3tbsp 2-3 Tbsp of “Smoky Southwestern Seasoning” (from the 21 Day Fix Recipe Book)
  • 1tbsp chili powder
  • 2tsp cumin
  • 1tsp coriander
  • 1/2tsp onion powder
  • 1/2tsp garlic powder
  • 1/2tsp dried oregano
  • 1/2tsp tsp smoked paprika (I used regular because I didn’t have smoked!)
  • 1tsp sea salt
  1. Whisk eggs with 2 tsp oil in a small dish and set aside.
  2. Heat 2 tsp oil in a large skillet over medium-high heat. Add veggies and stir fry till tender.
  3. Push veggies to the side of skillet, add egg mixture and scramble.
  4. Add cooked chicken, quinoa/rice and spices/soy sauce. Combine and enjoy!
