Oh how I love this enchilada recipe! I am a happy Mama anytime I can throw a bunch of healthy ingredients into a crock pot and not think about it again until dinnertime! My good friend Jeanne introduced me to this meal. The original can be found on her website: DCA Fitness. I changed it a bit so all members in my family would eat it. My 4 boys have a knack for spotting and freaking out about tomato chunks! Make sure you have a large crock pot as this recipe produces a big batch goodness. Ingredients
  • 1 lb ground chicken, or turkey free range, antibiotic free
  • 1.5 cups uncooked quinoa (rinised)
  • 1 can black beans
  • 1 can or cup corn
  • 1 cup chopped zuchini
  • 1 can diced tomatoes and green chilies (my boys don't like diced tomatoes so we used 3/4 can of tomato sauce)
  • 1/2 cup fresh salsa
  • 1 teas minced garlic (or 1/2 teas garlic salt)
  • 1/2 cup chopped onion
  • 1/2 cup sweet bell peppers
  • 1 cup water
  • 1 19 ounce can Chipotle sauce or Enchilada sauce (mild or medium depending on how much kick you prefer!)
  • 1 tbls chili powder
  • 1 teas cumin
  • *2 cups shredded white cheddar cheese *this is an optional ingredient
Instructions
  1. In a large skillet cook the ground chicken or turkey. Once browned and drained place it in crock pot.
  2. Rinse your quinoa and add it to the crock pot. Proceed to add all of the other ingredients. I literally just throw everything in and mix!

  3. Cover your crock pot and cook on high for 3 to 3.5 hours. Liquid will absorb, quinoa will expand, and a wonderful aroma will start to fill your house!

  4. If you are choosing to include cheese, this can be added at the end. Stir in the shredded cheddar cheese until melted.
  5. *Optional additions: I have made this with and without the zucchini. I have added different types of beans and fresh cilantro.
  6. Serve: 1. In a bowl with a dollop of greek yogurt and chopped green onions. 2. Inside romaine lettuce leaves 3. Wrapped in a whole wheat tortilla (Schall boy favorite!)
