Coconut Flour Snickerdoodles

My boys LOVE snickerdoodles. A friend found a "doodle" recipe using whole, natural ingredients with coconut flour (which I LOVE) so I thought I would give it a try. These are a family favorite! The recipe does not require a lot of ingredients cutting down prep time. We have to be careful not to eat the cookies like chips...they are addicting and oh so moist and tasty!

My boys LOVE snickerdoodles. A friend found a "doodle" recipe using whole, natural ingredients with coconut flour (which I LOVE) so I thought I would give it a try. These are a family favorite! The recipe does not require a lot of ingredients cutting down prep time. We have to be careful not to eat the cookies like chips...they are addicting and oh so moist and tasty!
Ingredients
  • 3/4 cup coconut flour
  • 3/4 cup Sucanat Sugar (or whole cane/raw sugar)
  • 4 eggs
  • 1/2 teas vanilla extract
  • 1/2 cup coconut oil (unrefined)
  • 2 teas sucanat sugar (set aside for dough balls to roll)
  • 2 teas cinnamon
Instructions
  1. Preheat Oven to 375F
  2. Beat the sugar, eggs, vanilla, salt and coconut oil together. Mix well.
  3. Add the coconut flour and mix well. Leave it to rest for 5 minutes.
  4. In the meantime, mix together the cinnamon & sugar in a bowl. Form the dough into small balls. They will be very sticky! I just sort of plop balls into the bowl and roll them in the cinnamon/sugar mixture. Once covered with sugar they are easier to handle and put on cookie sheet.
  5. Place sugar covered dough balls on a cookie sheet, and flatten with a fork.
  6. Bake for 15 minutes at 375F. After a few minutes of cooling remove from cookie sheet onto a cooling rack. If you keep them on the cookie sheet for too long they tend to stick making removal difficult.
