Clean Crock Pot Buffalo Chicken Lettuce Wraps

Ingredients
Chicken
  • 4-5 large boneless, skinless chicken breasts
  • 1/2 onion diced
  • 16 oz free range organic chicken stock
  • 2 cloves garlic
  • Dash pepper
  • 1/2-1 cup Frank's Hot Sauce
  • 1/2 cup cream cheese optional
Lettuce Wraps
  • several Romaine lettuce leaves
  • shredded carrots
  • sliced red pepper
  • feta cheese or blue cheese
Instructions
  1. In a crock pot combine chicken, onion, garlic and broth (enough to cover chicken) and cook on HIGH for 4 hours.

  2. Reserve a cup of the broth and discard the rest. Using 2 forks, shred the chicken.

  3. Add Franks Hot Sauce to taste (1/2 cup to 1 cup). If adding cream cheese, cube and add to crock pot. Cover and heat on HIGH for an additional 30 minutes.

  4. Makes 4 cups of chicken
  5. Wash lettuce. Scoop desired amount of chicken into wrap. Top with carrots, red pepper, and feta cheese.
