Ingredients
  • 4 1/2 C old-fashion rolled oats
  • 6 ripe bananas
  • 1/2 to 1 C all natural peanut butter I like to add a full cup!
  • 1/2 C unsweetened applesauce
  • 1/3 C 100% all natural maple syrup
  • 1 C chocolate chips Your preference: milk chocolate or dark chocolate
  • 1 tsp cinnamon
  • 1/4 tsp sea salt or himalayan sea salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 C mini peanut butter cups, optional
Chocolate Peanut Butter Drizzle
  • 1/2 C chocolate chips
  • 1 tbsp coconut oil
  • 1 tbsp all natural peanut butter *optional (the more peanut butter the better in my eyes!)
Instructions
  1. Pour the rolled oats into a food processor and pulse until pulverized.

  2. Place the oat mixture into a large mixing bowl and add baking soda, baking powder, salt and cinnamon. Set aside.
  3. Add the bananas, apple sauce, peanut butter and maple syrup to food processor. Pulse until liquified. Add this mixture to the oats and combine with spoon or spatula.
  4. Add the 1 cup of chocolate chips to this mixture and fold them into batter. If you are choosing to use the mini peanut butter cups, add these as well.
  5. Grease an 8 x 10 inch pan with coconut oil spray. Spread the batter into the baking pan. It will be thick!
  6. Sprinkle a few extra chocolate chips on top before putting the pan into the 350 degree oven for 30 minutes.
  7. When blondies are done remove from oven. Prepare the chocolate drizzle by heating the chocolate chips, peanut butter, and coconut oil in the microwave for 30-60 seconds.
  8. Drizzle chocolate sauce over the blondies. Cut and serve!
  9. These will keep well at room temperature for about 3-4 days. Freeze any leftovers!
