Ingredients
  • 2 cooked skinless, boneless chicken breasts
  • 2 celery stalks, chopped
  • 1/4 red onion (sometimes I leave this out!)
  • 1/2 cup red grapes, halved
  • 1 tsp garlic powder
  • 1 tsp ground black pepper
  • 1/4 teas Sea Salt (or to taste)
  • 1/2 cup plain greek yogurt (or Clean Mayonnaise - see link to recipe below)
  • 1 teas mustard (or more to taste)
  • 1 teas lemon juice (I like to add a bit more lemon. You can add lime juice as well)
  • 1/4 cup chopped walnuts
  • *1/4 cup shredded parmesan *Optional ingredient
Instructions
  1. Cook chicken (I usually boil or cook several chicken breasts in the crock pot at once and shred/cube for meals in the future. Once cooked, allow chicken to cool.

  2. Once cooled, put chicken into a medium sized mixing bowl. Add greek yogurt (or mayo) and stir to coat chicken. Here is the link to a clean mayo recipe:

  3. Sprinkle in spices and stir. Then continue to add each ingredient, mixing thoroughly.
  4. Serve atop spinach leaves, whole wheat tortillas, pita pockets, or Romaine Lettuce shells. Keep refrigerated.

  5. Store in covered container and keep refrigerated.
