Ingredients
  • 1 1/2cups whole wheat flour
  • 3/4cup flaxseed meal
  • 1 cup brown sugarcleaner option: sucanat
  • 1tsp baking powder
  • 2tsp baking soda
  • 1/4tsp salt
  • 2tsp cinnamon
  • 2tsp pumpkin pie mix
  • 1tsp ground ginger
  • 2 apples shreddedI just put in food processor and chop fine
  • 3/4cup nonfat milk
  • 1 egg
  • 2 egg whites
  • 1tsp vanilla
  • 1 cup blueberries
  • 1 nonsitick muffin tin
Instructions
  1. 1. Preheat the oven to 350 degrees. Mix all dry ingredients together (except blueberries).
  2. 2. In a separate bowl, beat eggs, milk and vanilla.
  3. 3. Pour this mixed liquid into dry ingredients. Stir and then fold in blueberries.
  4. 4. Fill each muffin tin 3/4 of the way full. Bake at 350 for 15 to 20 minutes. Makes 2 dozen muffins.
