Ingredients
  • 1 1/2 cup almond flour (I have used coconut flour as well and have even mixed the two)
  • 1/4 cup plain greek yogurt
  • 2 tbsp coconut oil, melted
  • 2 tbsp pure maple syrup
  • 1/2 teas pure vanilla extract
  • 1/2 teas baking soda
  • 1/4 teas sea salt
  • 3 eggs
  • 1 cup dark chocolate mini chips Optional: blueberries or raspberries
Instructions
  1. Preheat oven to 350 degrees and lightly grease a mini muffin pan with coconut oil spray.
  2. Put all ingredients (except chocolate chips and/or berries) into a blender and blend until smooth. The batter will be thick - don't worry!
  3. Fill the muffin cups 1/2 to 1/3 full. Then push a couple of chocolate chips into the muffin batter in each muffin cup and add two more to put on top!
  4. Put your pan into the oven for 10-12 minutes until golden brown on the top. When a tooth pick comes out clean from the center of the muffin.
  5. Enjoy!
  6. These are 21 Day Fix Approved when made with Blueberries: 4 mini's= 1.5 yellow, 1 Blue, 1/4 Red, 1/4 Purple, 1 tsp!
