Buffalo Chickpea Roll-Ups

These delicious roll ups are quite versatile. Add whatever crunchy veggies you have on hand. I feel they are best spread on a spinach or whole wheat tortilla and then rolled, but it can also be used as a spread on any sandwich or even a veggie dip. You can slice the roll ups into bite size pieces (pictured below). Eat them for lunch or use as an appetizer. You may want to double or triple the recipe - it goes quick!

Ingredients
  • 1 can chick peas rinsed
  • 1/4 C feta cheese other options: blue, goat, gorgonzola or cream cheese
  • 1/4 C buffalo sauce
  • 1 green onion finely chopped
  • 1/4 C finely chopped veggies options: celery, red pepper, carrot, seeded cucumber, apple
  • 3 10 inch tortillas I prefer whole wheat or spinach
Instructions
  1. Place drained and rinsed chick peas in a blender or food processor (or mash with a fork/potato masher).
  2. Add the buffalo sauce and cheese and pulse until smooth. You'll notice my mixture was chunky. If you are going for more of a hummus texture you'll need to pulse longer.
  3. Remove the mixture into a medium sized bowl and add onions and diced veggies.
  4. Use a spatula to spread chickpea mixture onto tortillas. Spread it evenly over the entire tortilla. Choose your own thickness! The thicker the better in our house.
  5. Gently roll the tortillas tightly. I recommend wrapping plastic wrap around each before putting them into the fridge to chill for about 20-30 minutes.
  6. Once chilled and firm, remove tortilla from the plastic wrap and slice into bite size pieces. ENJOY!!!
Recipe Notes

Notes: If you eliminate the cheese it is recommended that you replace it with 1 Tbsp of olive oil or coconut oil.
