Buffalo Cauliflower

This is not an original but will become a staple in our house. My husband is not the biggest vegetable fan, but he will eat cauliflower. When I saw the Buffalo Cauliflower recipe in my Fixate Cookbook by Autumn Calabrese (see link to cookbook below), I knew it would be a hit with him. Although a bit too spicy for the kids we LOVED this as a side dish to our grilled chicken dinner. So good!

Buffalo Cauliflower

This is not an original but will become a staple in our house. My husband is not the biggest vegetable fan, but he will eat cauliflower. When I saw the Buffalo Cauliflower recipe in my Fixate Cookbook by Autumn Calabrese (see link to cookbook below), I knew it would be a hit with him. Although a bit too spicy for the kids we LOVED this as a side dish to our grilled chicken dinner. So good!
Ingredients
  • 6 cups cauliflower florets
  • 1/2 tsp salt (sea salt or Himalayan salt)
  • 1/2 cup Frank's Hot Sauce
  • 1/2 cup Rice Vinegar
  • 1 tbsp cornstarch
  • 2 tsp ground chili pepper
  • 1/4 tsp paprika (smoked paprika is recommended!)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp pure maple syrup
  • 1 tsp Worcestershire sauce (I use low sodium, organic)
  • 2 tbsp butter (organic grass fed is recommended)
  • 3 cups celery sticks (optional!)
Instructions
  1. Preheat oven to 350 degrees F. Lightly coat a large baking sheet with coconut or olive oil spray.

  2. Place cauliflower florets on baking sheet and coat cauliflower with spray as well. Season evenly with 1/4 tsp salt.
  3. Bake for 20 minutes until tender -crisp.
  4. While cauliflower is baking, combine ingredients for sauce. In a medium sauce pan combine hot sauce, rice vinegar and corn starch. Whisk until dissolved.
  5. Then add chili powder, paprika, garlic powder, onion powder, maple syrup, Worcestershire sauce, butter and remaining 1/4 tsp salt; whisk to blend.
  6. Heat hot sauce mixture over medium heat; cook, stirring frequently, for 10 minutes or until thickened. Set aside.
  7. Remove cauliflower from oven. Pour hot sauce over baked cauliflower (on baking sheet); mix well.

  8. Return coated cauliflower to the oven to bake for 5 more minutes.
  9. Serve hot with celery sticks or as a side dish!
