My kids like broccoli so I didn’t make these to try to get them to eat their veggies, but I will say they found these broccoli tots to be quite a nice treat! I recommend using a food processor. With it, these are so easy and quick to prepare! You can surely get away without using one, but you’ll just have to add in some extra time for chopping. The florets need to be diced as small as possible so the batter sticks together when molding.

Although warm and crispy when I took them out of the oven, my kids didn’t get to their first bite until the tots were room temperature and they still loved them. So I am thinking –> LUNCHBOX worthy! I may just get some veggies in their packed school lunches now!

Ingredients
  • 4 C broccoli florets (fresh, not frozen)
  • 1/2 C diced onion
  • 2 large eggs beaten
  • 1/3 C panko breadcrumbs (you can use any type of breadcrumb. Panko makes them lighter)
  • 1 C shredded cheddar cheese Shredded yourself is best! Choose white cheddar over orange.
  • 1/2 teas garlic powder
  • 1 teas sea salt
  • 1 teas black pepper
  • 1/2 teas onion powder
Instructions
  1. Preheat oven to 400 degrees. Place parchment paper on a large cookie sheet. Or, coat baking sheet with nonstick cooking spray (olive oil or coconut oil).
  2. Cut off the broccoli florets from the stalk. Blanch broccoli in boiling water on your stovetop for 1-2 minutes ONLY. Then, remove and immerse in cold water to stop the cooking process. Drain well and pat dry.
  3. Chop the broccoli finely. If you have a food processor I recommend putting the florets in it to dice. They should be as small as possible. Be careful not to pulse too much and turn it into a puree!
  4. Put beaten eggs, onions, cheddar cheese, and spices in a mixing bowl. Mix well.
  5. Add the broccoli and breadcrumbs to the bowl and stir well. (FYI: To make the process go even faster, throw everything in the food processor all at once. Again, don't over do it!)
  6. Place in the fridge for about 15 minutes to firm up the mixture making it easier to form into tots.
  7. Remove from fridge, using your hands scoop out 1-2 Tbsp portions of the mixture to form tater tot shapes and place the on your baking sheet.
  8. Mist the top of each tot with oil spray and bake for 10 minutes. Flip them over, mist tops again, and bake for an additional 10 minutes until the outside edges are golden brown and crispy.
  9. Remove from oven and let cool. Then ENJOY! I recommend dipping them into some buffalo sauce for some extra added flavor!
