Breakfast Burritos
Mornings may be rushed and hectic but my goal is to not let anyone out the door without eating a decent breakfast! I proclaim a win when I can get some protein and veggies into my boys bellies before they head to school…even if it means eating their breakfast burritos on the bus stop corner!

  • 18 eggs
  • 15 whole wheat tortillassuggested brand: Trader Joes (look at ingredients – less is better!)
  • 1Tbls coconut oil
  • 1/3C chopped green onion
  • 1/3 C chopped red pepper
  • 1/4C milk (almond or cows milk – your preference)
  • 1C cut breakfast sausageSuggested brand: Applegate Farms Breakfast sausage or homemade!
  • 1teas sea salt
  • 1/2teas pepper
  • 1/2 teas garlic salt
  • salsa for dipping
  • 2C shredded white chedar cheese*optional
  • 1/4C mushrooms*optional
  • 1/2C cubed sweet potatoes*optional (cook and prepare ahead of time)
  1. Melt coconut oil in a large frying pan and saute all veggies.
  2. Beat eggs and milk in large mixing bowl.
  3. Add all seasonings and spices to the egg mixture.
  4. Pour eggs into frying pan with veggies and scramble.
  5. Scoop 1/2 C of egg mixture onto each tortilla. Sprinkle on cheese as desired. Fold ends of tortilla and place in a baking dish.
  6. Bake at 350 degrees for 20 minutes and serve with salsa and fruit!
  7. FREEZE remaining burritos for the week! Wrap each burrito in aluminum foil, seal and place inside a large freezer bag. To serve: Remove from foil, place a damp paper towel around burrito and cook in the microwave for approximately 2 minutes. See Video Below!
