Avocado Egg Salad

  • 8-10 hard boiled egg whites diced
  • 8 tbsp avocado mashed
  • 1/3 cup onions diced
  • 1/2 cup celery diced
  • 1/4 cup red pepper diced
  • 1 tbsp mustard
  • 1 tsp paprika
  • 1/2 tsp ground black pepper
  • pinch sea salt optional
  1. In a medium bowl, combine eggs, onions, celery, avocado, pepper, and mustard. Stir until mixed.
  2. Place on top of Romaine lettuce leaves as a wrap or on a slice of Ezekiel toast.
  3. Leftovers can be stored in a sealed container for up to 3 days.
