I love fall. I love chicken salad. Blending the two together makes this dish extra special! We eat it for lunch on top of romaine leaves, but the sweetness from the apples, cranberries and dressing allow it to fall under snacks and side dishes as well! Enjoy!

Ingredients
  • 4 C cooked chicken cubed into pieces Cook and prepare as you wish
  • 1/2 C Mayonaise We use organic (check ingredients!)
  • 1/2 C greek yogurt
  • 1 Tbsp apple cider vinegar
  • 1/4 C honey
  • 1 C roasted cashew halves
  • 2 C diced apples We love honey crisp apples in the fall
  • 2 Tbsp chia seeds
  • 1/2 C dried cranberries
  • 1/4 C sunflower seeds
  • salt and pepper to taste
Instructions
  1. In a large bowl, whisk together mayo, greek yogurt, vinegar, honey, chia seeds, salt and pepper until combined. Cover and put in refrigerator until ready to use.

  2. Cut fruit and chicken. In a separate bowl add diced chicken, apples, cashews, and sunflower seeds. Mix well.

  3. Pour desired amount of dressing over chicken salad mixture. Toss to coat well. Refrigerate for an hour to chill and allow flavors to blend! Enjoy!
